Year of the Macaron, It’s the New Pie
Last year I dedicated to mastering the pie. My New Year’s resolution was to make or eat at least one pie a month. I ended up making close to twenty pies. This year, I’m taking a stand. A stand for the macaron that is. My first effort was on Valentine’s Day. I stopped by Harris Teeter on my way home from SiriusXM, and picked up what I needed for the ‘cookie.’ I thought I had enough to make the filling. They were rather easy to make, the hardest part was all the dirty dishes. I have to say the buttercream filling was a bit much – too much sugar (1/2 cup butter, 1 1/2 cups powdered sugar, and a little milk).I can’t wait until the next batch, maybe I’ll make a chocolate ganache filling.
