Product Development is one of the greatest disciplines of the modern world, for a lot of reasons, but none as great as the reason it has brought us the Batter Blaster. Thank you world.

The thought of dispensing pancake batter from an aerosol can was a leap that deserves mad props and much love. The truly brilliant part, was they realized some common objections, created personas, and modified the product to appeal to those segments by certifing the product as organic. Brilliant.

Brilliant pancakes, too. Both my kids gave it a thumbs up.

Review of Aretha Frankensteins’ Pancake Mix

So, there’s this breakfast joint in Chattanooga, TN called Aretha Frankensteins, and they claim on pancakes. My kind of place. I got a box of their mix, and brought it back home to make them—with nothing but excitement building in my soul.

This batch was a little thin, I think it was mixed that way, but I didn’t have buttermilk handy, and used what I had—a mark of a true professional.

I threw some pecans in them, and with those that the pancakes had a really good taste & texture.

If you can’t get to Chattanooga to buy some, you can find the pancake mix at their online store. It’s $25 for 3 boxes, or if you eat pancakes like me, a case of 12 boxes are $73. You’ll just need a good source for maple syrup.

Toast in Indiana, and a toast to New Albany

This isn’t your parent’s New Albany, not with Toast, Wick’s and all the other great places. Jeffersonville might be the ‘Sunny Side of Louisville,’ but New Albany reminds me of ‘Little Louisville.’

One of Louisville’s best is now New Albany’s best breakfast (with Honey Cream a close second). Toast has opened a restaurant in New Albany, and I couldn’t resist a chance to try a slight variation of my favorite breakfast in Louisville. It’s a lot smaller than the original location, but the portions are the same. If the tables are full, there is most always immediate seating at the bar. There’s nothing quite like sitting at a bar for breakfast.

Pancakes are my favorite thing on the menu, and they sure know how to do them in a desert style. Pictured is their blueberry / custard pancakes. Remember, if you are going to have the calories, it’s best to have them for breakfast, right? They once had a gingerbread pancake that rocked my world.

Their omelets are amazing, but only seconded by the decor and energy you feel when you walk in this place.
